The variables that drive F&B economics specifically
Average cover spend and seat turnover rate together determine daily revenue potential more than almost any other input — small changes in either compound significantly over a full year. Food cost percentage against menu pricing, labour cost as a share of revenue (typically the largest controllable cost line in F&B), and fit-out and equipment costs relative to the location's rent structure round out the core model. Location footfall data, where available, matters more here than in most other sectors.
Where generic models fail F&B specifically
A standard business-plan template usually treats labour as a flat percentage of revenue rather than modelling shift-based staffing against actual service hours, and treats rent as a simple fixed cost without accounting for percentage-rent or revenue-share arrangements that are common in UAE mall and hospitality locations. Both distort the real break-even point.
Licensing sits alongside the numbers, not after them
F&B licensing (food safety approvals, health authority requirements, and location-specific permits) has its own timeline and cost that should be modelled into the feasibility study's cash flow, not treated as a separate step that happens after the numbers are approved.
